Congratulations on your 5th month in business. I am very happy to hear your client was concerned you may not be able to handle the workload they were going to have for you. That is so much better than not being able to find any work at all.
I think if it were me running your company now and I started getting a little swamped, I would just sub-contract out the overload work. I don't know if I would want to have to deal with hiring an employee at this point.
There are sooo many great artists available on the net that can do good work for you. Why not try to harness some of their abilities and energy and see which ones really work well with you. From there you can always work more with them. Also remember there are plenty of great graphic designers on this forum you could work with as well. You could always post jobs you need work done on.
Hiring an employee now might be too much of a pain in the butt. That's just my take. Does anyone else have any insight for Andrew?

Another thing I wanted to say was quite often when a business is new, it looks for things to do to 'legitimize' it's existence. It does things to be able to tell others, look my business is growing, see! See here is proof!
It also spends money when it doesn't have too and that concerns me. As a start up, expenses need to be kept as minimal as possible to allow you to build up some cash reserves. These cash reserves will help you make it through the rough times.
Andrew, I know you are from Utah. Another great entrepreneur who came from Utah was JetBlue founder and CEO David Neeleman. Did you know his first business venture crashed because he hadn't saved enough money to make it through a rough spot? When his business crashed, he went back to working in his father's retail store.
